Kolucan Mexican Bar & Grill was born from memory, heritage, and a shared passion for hospitality.

Named after San Lucas Colucán, the hometown of co-owner and chef Gino Calleja’s family in Puebla, Mexico, the restaurant reflects generations of recipes, traditions, and experiences that shaped his understanding of food from an early age. Inspired by the meals prepared alongside his mother, Reyna Europa, and the vibrant flavors of regional Mexican cuisine, Kolucan was created to honor authenticity while introducing Sarasota to a more elevated and contemporary perspective on Mexican dining.

After immigrating to New York as a child and later building his culinary career in Sarasota kitchens, Calleja opened Reyna’s Taqueria before envisioning a larger concept centered around culture, creativity, and connection. That vision became Kolucan.

Together with culinary partner Chef José Rojas, the team has created a menu that balances traditional techniques with thoughtful innovation. Handmade tortillas, layered moles, fire-roasted salsas, fresh seafood, vibrant vegetables, premium meats, and handcrafted cocktails come together in dishes designed to feel both deeply rooted and unexpectedly refined.

But Kolucan was never meant to be just a restaurant.

From the energy of the Frida Lounge and its tequila and mezcal program to wine dinners, cocktail classes, cooking workshops, live music, and private celebrations, Kolucan was designed as a gathering place where food, art, music, and community intersect.

Every detail, from the menu to the atmosphere, reflects a commitment to hospitality that feels warm, expressive, and personal.
